Ode to Eggs


If I had to choose one food as my favorite it would be eggs. I love eggs. Not in a fluttery, heart palpitating, beginning of a relation kind of love but in a long enduring, til death do we part kind of love. If there is a soulmate food, eggs are mine. Best part...unlike other favorite foods eggs do not trigger binge eating. Lucky me!

All that being said, I've never been fond of plain egg whites. Too plain. I need at least one yolk to flavor it up. Egg whites alone have no taste. When I did my competitions there were times I'd have to eat 10-12 egg whites and I would choke them down. Season with hot sauce. Salt and pepper. Salsa. Anything to get it down. Eggs over medium with the yolks? I could eat that 3 times a day and never get tired of it. Hard boiled eggs? If there's yolk, hell yeah! Omelets, scrambled, even egg beaters. Yum!

Along comes OSM (see LLU's operation safe mode) and my thoughts on egg whites have changed. OSM has cleaned my palate. Since I no longer eat chemical laden frankenfoods and I stick to one ingredient "if God made it eat it, if man made it don't eat it" style of eating my tastebuds have changed. My perception of flavor is so heightened that I fell in love with egg whites. Who knew they had such a delicate flavor? And full of flavor they are! You're gonna think I'm crazy but this morning as I ate my egg whites I thought to myself, ahhhh, this is MY caviar.....so good!

The strawberries and cherries I had as my side to egg whites were pretty rocking, too.

And then I got to thinking, action mode is over, but this how I eat. This is my preferred breakfast. I don't WANT anything else. Sure I might switch it up...mango instead of berries...but this is my Lifestyle. My choice.

The Perfect Bite

The Perfect Bite by my own definition is a mouthful of a dish (recipe) with one piece of each of the dish's ingredients. I don't mean ranch dressing in my apple pie, I mean, if a dish is the show each ingredient is a supporting actor. TO have all represented in one mouthful is to experience the dish as a whole as the chef (artist) intended. All ingredients start out as solo parts until ruminated in my mouth where all those individual flavors meld together to become the dish. So here is today's Perfect Bite.

Welcome to Erin Ellen's!

Welcome to my virtual cafe/coffee shoppe.

I am planning on opening a coffee shoppe or a fresh food cafe in the next few years so I thought why not start with a virtual one? I can blog, try recipes, chat, etc just like I would in my real coffee shoppe/cafe. Why wait until the real thing opens?

So here we are. I invite you to have a seat and make yourself at home. I hope you enjoy.



So who am I? My name is Erin Ellen. Ellen being my middle name. I was named after one of my mom's sisters and it's a good thing she picked my favorite aunt. Otherwise, it might have been awkward being named Erin Carol or Erin Gail. LOL I'm currently (May 2013) 48 years old. I'm a single woman living alone with my two dogs, Patches and Cuddles. You'll meet them soon enough. I also, have a 24 yr old son who spends most of his time working or with his girlfriend. Lucky for me he's started working out so I do get to see him at the gym from time to time.

I love food (and spirits). I also, like being fit, healthy and lean. Can I have both? Food and a fit body? Of course!!! So that will be a main topic around here. Eating good. What does that mean? Does "good" mean healthy? Does it mean tasty? I think it can mean both so that's what we're going to focus on 90% of the time. The other 10% of the time? All that stuff we know isn't the best choice but we still indulge in from time to time. You got it...cookies, cakes, alcohol, processed foods, etc. While I do eat good 90% of the time I do still like to indulge once in awhile.
